CHICKENS are undoubredly the most common homestead animal,and with good reason. Aside from their well-known efficiency as egg and meat producers, they are easy to care for, inexpensive to buy and maintain, and do not require much space. the feed:egg:meat conversion ratio is 4.5.:1 er fozen eggs and 3:1 per pound of meat.
Caring for chickens and the egg a few rs is an activity that can bee asilly handled by young children, once they underestan a few rules about not chasing or yelling at the birds. Of all the chores in which we involve visitors, eggs collecting seems to give them the greatest pride. Our own children have long since gotten over being thrilled at the chore, but still delight in colleting the money they earn when they sell their eggs.
One fall we wanted to buy a dozen replacement hens and we located a retiring poultryman who was selling his birds for a good price. Both price and birds were so good that we figured we had at last found an excellent use for the unsused space on the second floor of our barn. We bought 175 hens and we were in the egg business.
We stayed in business until the following July and then sold out in a week to avoid housing them through a hot end humid summer. I asked everybody in the family not to sell lmy favorite chicken but unfortunatedly she was also the most friendly, so she was sold with the first dozen hens. Talk about being "mad as a wet Hen"!
The only reason we did not go back into business on the scale was because we enjoyed our egg customers too much. We had forty-four customers per week and the average time spent with eaqch customer was twenty minutes. We loved every minute of the poeple sharing their lives both past and present with us, but unfortunately homsteads do not run on good conversation alone.
The adult female chicken is called a hen and the adult male is a cock or rooster. A female under a year is a pullet, a young male is a cockerel, and a baby chicken of either sex is called a chick. A capon allows the bird a long grouwth perod before it is used as meat. The procedure imroves of the meat because the amount of fat is increased.
when you order chicks, you must choose sexed or straight run. Sexed chicks are separated aby gender; straight run means an approximate fifty-fifty mix of eaach gender, the way they come from the incubator.
You also have a choice of age. You may purchase day -old chicks, stared pullets (six to eight weeks old), or ready-to lay pullets(about five months old). The price increased with the age. Second-year layers can usually be picked up for a good price in the fall; these birds have had their first annual molt(change of feathers) and therefore tend to lay fewer (by about 10 percent) but larger eggs. We say tend to , because we have had Reds and Blackk sex-links that have laid jumbo eggs the first year and continued to lay ficve to six eggs per week during their second year.
You may see refaerence to the national breeding grades when buying chicks. These grades refer to the egg-laying ability of the chicks' ancestors. The grades are as follows:
Chickens
Chickens are given a blood test for pullorum, a backterial infeaction transmitted from hen to chick; it can kill as many as threee-fourths of the chicks in a hatching. In tested flocks, the positive stock are removed. Flocks tested are graded as follows:
Breeds
There are more than two hundred breeds of cickens and all come in two sizes: standard and bantam. Bantams weigh approsimately one third or less than the standard-sized birds. Standard size refers to the full size of that particular breed; not all full-sized birds are one size. For example, the standard-size Rhode Island REd hen's average weight is seven pounds, whereas the standard-sized Leghorn hen is four pounds. chicken breeds vary in shape, color, temperament, egg-shell color, feed efficiency, and a number of other areas.
The American Poultry Association has developed a "standard of perfection" as a guide and system for listing and describing the various breeds. Purebread chickens are fist classfied accordint to class, indicating the original geographical area of breeding. they are further classified according to breed, which gives an indication of general shape and other physical features.. The final classificacion is varieties, indicating the color pattern or comb type found within a given breed. Using the standar of perfection, the Plymouth Rock is classified as follow:

Varieties: Barred, Blue, Columbian, Patridge, Silver Penciled, White-Buff
SELECTING CHICKENS
Most homesteaders are interested in a good dual-purpose chickens are aboth good egg layers and meat birds). The most popular are the Rhode Island Red, Plymouth Rocks, New Hampshires, and various strains of these breeds. The hens are medium-sized, weighting 61/2 to 71/2 pounds.
Before you buy chickens, decide what color eggs you want. If you live in New England and plan to sell eggs, you want brown eggs; in the rest fo the country, white eggshells are more popular. The shell color does not affect taste of food value of the egg, but local preference affects the market value.
Examples of brown-eggshell layers are Rhode Island Red, New Hampsire, and the Rocks. Leghorns, Anconas, and Minorcas are white-eggshell layers. The Leghorn is the mosat popular and efficient egg laayer; it is lightweight,, with the hens weighing 4 to 41/2 pounds at maturity. For vairety, the Arauciania or Easter Egg chickens lays eggs with blue or blue-green shells.
